Baking Tips You Have to Read: Matcha Lava Cake Recipe

Who on world doesn't like green tea lava cake??? Since matcha lava cake are so hard to find in Malaysia and often burns your wallet, why not try making some at home? 


For this 2-servings recipe you will need:

  • 100grams of white chocolate-finely chopped up (Semi-sweet cooking chocolate)- or just get a normal bar of cooking chocolate and break it into half...
  • 3 tablespoon of butter
  • Extra butter softened at room temperature to prepare the ramekins
  • 3 tablespoon of sugar (both castor or icing will do)
  • 2 eggs 
  • 2 tablespoon of all purpose flour
  • Extra all purpose flour to dust your ramekins or bowls
  • 1 and 1/2 tablespoon of green tea powder
  • Pinch of salt
FOR NEWBIES: Some Tips For the Perfect Lava Cake

TIP #1: You can change the amount of sugar and green tea powder to suits your tasting. Don't be afraid to change the recipe. ^^ I like my lava cake less sweet so 3tbsp of sugar is just right for me.

TIP #2: The more flour you add into your batter, the thicker it will be and less lava-ry it will become. 2-3 tbsp works the best and not more than that.

TIP #3: Softened butter works best when it comes to preparing the ramekins because it let the flour stick nicely inside the bowls. This is to let the cake come out of the bowl in one piece. DO NOT USE MELTED BUTTER. 

TIP #4: You dont need a very large bowl to make this, because the larger the bowl, the higher the probability the center will SINK and you'll end up with a cake with a dent in the middle. Using a ramekin/bowl with the diameter of 8-10cm will be enough. Using a round bowl (with no edge) helps the cake bakes evenly. 

TIP #5: You want finely chopped white chocolate pieces because not only it will save you a lot of time when you melt it in the microwave but it also decrease the chance of the chocolate burning into inedible lumps.


Instructions to get the perfect cake:


  1. Preheat your oven to 180C before you start preparing your batter.
  2. Prepare your ramekins by brushing the insides with softened butter and dust every corner with flour. Remember to TAP OUT the excess flour!!!
  3. Get a fairly large microwave-safe bowl and mix in your white chocolate chunks and butter. Melt it in the microwave, making sure you stir it every 1 minute until it is nicely melted and stirred well together. Let it cool for 2 minutes.
  4. To the white chocolate mixture, sieve in the salt, sugar, matcha powder and flour until well combined.
  5. Crack one egg at a time and constantly stirring so everything is incorporated well.
  6. By now you should have a nice green batter, feel free to give it a lick or two for taste-testing. 
  7. Pour the batter into two ramekins. You can let it chill in the fridge for 10 minutes if the batter is still warm from the white chocolate mixture. If not, you can bake it now.
  8. Remember to tap down the ramekins on the counter to remove any air bubbles and even up the batter. Place the ramekins on the baking trays.
  9. Bake at 180C for 10 to 12 minutes. 
  10. Take it out of the oven and let it cool a bit before you flip them over.
  11. Loosens the sides and place the plate above it, then FLIP, it will pop out like magic. DUST it with some confectionery sugar or extra matcha powder and serve it up with some vanilla icecream!!! 


TIP #6: Sieving the flour, matcha powder and icing sugar helps give that fluffy texture in your cake and there wont be any big lumps here and there in the batter.

TIP #7: I wont recommend cracking in the egg while the mixture is still HOT, unless you wan scrambled green eggs!!! Let the white chocolate mixture cool off a bit before you add in the eggs

TIP #8: For a lava cake, TEMPERATURE OF THE OVEN IS THE KEY. Every oven is different but i find the temperature 180-200C works best at a duration of 10-12 minutes!!! This is to avoid getting a fully cooked cake that is tough and firm. So, do keep an eye on your cake, making sure that the inside is still soft and lava-ry.
