Delicious Homemade English Muffins Recipe

In Sibu its really hard to find english muffins at the bakeries. English Muffins are good for making McDonald style breakfast muffins, Egg Benedict, or even good with plain jam and butter, I try to recreate it at home. This recipe is easy and the resulting muffins are just wonderful.

Make 8-12 muffins (diameter 8cm or so)

Ingredients:

1 cup of milk
3 tablespoons of butter
1 egg
1/2 teaspoon of salt
2 teaspoon of sugar
3 cups of all purpose flour
1 teaspoon of dry yeast
Extra cornmeal for dusting (I don't have cornmeal so I just use plain flour to dust. It works well)

Method:

1. Melt butter in microwave and set aside to cool down a little.
2. If your milk is cold, warm it up inside the microwave for 1 minute.
3. Mix your sugar and yeast with the warm milk and set aside for 5 minutes.
4. Once your yeast bloomed, mix in all the ingredient into a big mixing bowl. Start off with a spatula then continue kneading with your hands.
5. The dough should be slightly sticky and elastic when done. 
6. Shape the dough into a ball and cover the dough with plastic wrap and a towel. Wait for 2 hours until it doubles in size. 
7. Once it doubles up, transfer dough to the counter and start kneading and flattening it out with a rolling pin. 
8. I use ramekins to cut out the round shape of the muffins, but anything round will do. You can cut out any diameter of any thickness you want. Mine is around 8cm diameter and 1.5cm thick.
9. Once all your muffins are cut out, place them on baking paper and let them sit aside for another 1 hour. 
10. You will see the muffins doubling in size and its time to grill them. But before you grill, remember to preheat your oven to 200 degree Celsius because we are going to bake them later. 
11. Heat your skillet or frying pan over low heat. NO OIL IS NEEDED
12. Dust your muffins with some cornmeal or some flour before you grill them on the skillet for 30 seconds to 1 minute or less for each side of all the muffins. 
13. You only want to brown the sides to get a nice flat base but not cooking them thoroughly.
14. Place all the grilled muffins back on the baking paper and bake them inside the oven for 10 minutes. 
15. Let the muffins cool down upon removing them from the oven and there you have it!! Yummy tender english muffins.

3. Melt butter inside microwave.
4. Melted butter.
5. Place yeast and sugar into milk and stir well.
6. The yeast had bloom nicely.

3. Use hand to continue kneading.
4. Roll dough into a ball.
5. Use plastic wrap to cover up.
6. Use a towel to cover again.

1. The dough had double in size after 2 hours.
2. Roll it out using a rolling pin.
3. About 1.5 cm flat.
4. I use ramekin to punch out my muffins.
5. Place muffins on baking paper.
6. Cover muffins with towel and leave for another 1 hour.

1. The muffins had doubled in size after 1 hour.
2. Heat up your skillet on low heat.
3. Place your muffins.
4. You want to flip them aftre 30-60 seconds or until just slightly brown.
5. Place the grilled muffins on baking paper.
6. Bake them at 200 degree celsius for 10 minutes.

The reason why I choose to bake them in the oven instead of just the skillet is because I think the muffins rise so much better inside the oven and the heat will thoroughly kill off the yeast. Most method require muffins grilled on a frying pan for 5-7 minutes per side but if the temperature isn't right, you might just get charred muffins in the end. So using both skillet and the oven is a foolproof way to get the perfect muffins with the signature grilled flat base.

You can certainly place these muffins inside the fridge if you can't finish them at once. They heat and soften up nicely by means of microwave.
