Passion Fruit Microwave Cake Recipe

For 1 Serving.
This is a one cup recipe

Ingredients:

1/8 cup of butter
1/8 cup of granulated sugar (halved if you want it less sweet)
1 medium egg 
1/8 cup of self raising flour (or 1/8 cup of all purpose flour + 1/8 teaspoon of baking powder)
1 tablespoon of milk
Pulp from 1 passionfruit
Topping: Raspberry jam and cream cheese (customize it yourself)

Method:

1. Melt your butter inside the microwave in a large mug. 
2. Mix in the sugar and passionfruit pulp
3. Mix in the flour, milk, and egg. Stir well until everything is combined. 
4. Microwave on HIGH for 1 minute and 30 seconds until the cake is well risen and the center comes out clean. (if you microwaved it too long, your cake will be rubbery)
5. Let it cool down before you frost them. I frost mine with some plain unsweetened cream cheese and raspberry jam. 
6. You can add some extra passionfruit pulp on top as well. 


1. I strain my passionfruit but its optional.
2. I only used the passion fruit juice.
3. Mix in everything.
4. The mixture comes out smooth.
5. Top it up with whatever topping you prefer.
6. See how moist and soft is this cake. Passionfruit goodness!!

Tips: 
  • This recipe is more of a soft puddingcake like consistency, if you prefer a firmer cake, add 1/4 cups of flour instead of 1/8 OR you can use Half An Egg instead of the whole egg. 
  • You can also try chilling it and serve up with vanilla ice cream!!
  • Toppings can be whipped cream, passion fruit pulp, any fruit jam, cream cheese, raisin...anything you can imagine!!
  • I strain my passionfruit but you can always skip this step if you wan crunchy bits in your cake.
